We are previewing a dance music inspired modern Chinese concept propelled by olive oil from Natashia's family field in Greece in a Chinatown Bar
At home, I use the olive oil from Natashia’s family field in Greece to reimagine Chinese food that's usually made with high heat oils. By simply changing the way I apply heat due to the character of olive oil, it's completely changed my cooking and it comes out tasting like Chinese food from a blue zone.
Little things like this made me wonder if this is how limitations and constraints have forced humans to organically evolve cuisine over the years. In a world where you can get anything from anywhere anytime you want it, limitations may in fact spur more innovation than abundance.
Of course, if you're in the Mediterranean you'd probably be listening to dance music. Every night I play my son the same song to go to sleep Gazebo Masterpiece, an italo disco classic released the year I was born. That's our song and this is our restaurant: Gazebo, popping up at the legendary Flower Shop at 107 Eldridge Street
